A Taste of Café Boulud with Chef Christopher Zabita – Palm Beach, FL

Stepping into Café Boulud, nestled within the historical elegance of the Brazilian Court, I felt the true weight of the evening—a gathering reserved for tastemakers, food writers, and luxury aficionados. The arrival of their new chef brought an innovative spark to this Palm Beach institution, blending classical French culinary artistry with fresh perspectives. Every detail spoke of sophistication, a reflection of Café Boulud’s dedication to creating an experience that resonates deeply with those who appreciate fine dining. I left the event not just inspired by the dishes but enriched by the stories shared and the company kept—an experience I’ll recount with the same appreciation they poured into every course.

The evening began with a champagne and cocktail reception as we mingled in the hallway leading to the restaurant’s reception station. The energy in the air was palpable, each guest quietly anticipating the evening ahead. With a sense of refinement woven into every detail of the setting, the hallway—warmly lit and tastefully adorned—felt like a subtle preview of the elegance awaiting us at Café Boulud.

At 7:00 pm, we made our way to the restaurant’s outdoor courtyard, where the evening unfolded. The soft hum of conversation mixed with the faint scent of garden blooms, creating an ambiance both intimate and lively. As we settled into our seats, Chef Zabita joined us, sharing personal anecdotes of his journey and his vision for Café Boulud’s menu. His story added a personal touch to the evening, blending tradition with an inventive spirit.

a beautifully plated tasting of canapés as prepared by Chef Chris Zabita at Café Boulud, located inside the Brazilian Court Hotel, in Palm Beach, Florida.

The first course arrived—a beautifully plated tasting of canapés, each bite a carefully crafted delight. From left to right: the airy gougères with Molitero and osetra caviar to the tender King Crab with lemon confit and pickled basil, each flavor was a revelation. The tropical notes of pink pineapple with passion fruit BBQ and violas were a surprising twist, while the rich foie gras on pain perdu with pear offered a velvety finish. Each canapé showcased Chef Zabita’s artistry, setting the stage for the exceptional courses to follow.

Among the standout dishes were the Duck Sugo Fusillotti and the Australian wagyu, served with a smoked garlic pomme purée that was luxuriously smooth. The steak was incredibly tender and perfectly seasoned, a true testament to Chef Zabita’s skill. Dessert stole the show for me—a white chocolate feuilletine with a surprising peanut butter twist. Light and silky, it delivered a bold, nutty flavor that left a memorable impression.
