Chive Restaurant Review – Vero Beach, FL
Introducing Chive, Vero Beach’s go-to spot for fresh, fast, and flavorful dining options. Founded by local entrepreneur Louis Kolbauer—also known for his popular ventures, The Green Marlin Restaurant & Raw Bar and Rosie Malloy’s Pub—Chive has been delighting the community since 2013 with its “Quick, Creative Cuisine.” This beloved eatery offers a vibrant experience, complete with a full-service bar, an inviting outdoor patio, and a welcoming ambiance infused with Lou’s unique artistic touch.
Chive’s menu truly has something for everyone, catering to a wide variety of tastes and preferences. Guests can craft their own perfect meal from an array of fresh toppings, proteins, and dressings, or opt for the thoughtfully designed options already laid out on the menu—ideal if you’re new to the restaurant’s extensive choices. And the fun doesn’t stop with the food; Chive’s Happy Hour, daily from 3-6, offers half-off drafts, well liquors, house wines, and select calls, adding an extra reason to visit. Whether you’re looking for a casual bite on the patio, a seat at the bustling bar, or a spot in the dining room, Chive is the place to indulge in a creative, satisfying meal.
Now let’s dive right in and see what this place has to offer and what I had to eat!
The Chive Chopped Salad is a bold and vibrant dish that brings together a medley of flavors and textures. Tender seared steak is served atop a fresh lettuce blend, accompanied by dried cranberries, red onion, olives, almonds, cilantro, bleu cheese crumbles, creamy avocado, and smoky bacon. The salad’s standout element is the chimichurri, which brings a refreshing and herbaceous note to each bite, perfectly balanced by Lou’s Hot Sauce for an extra kick. The steak, cooked to perfection, is flavorful and juicy, making this salad a must-try for those who crave a hearty yet fresh, flavor-packed meal.
The Ahi Tuna Salad at Chive is a must-try for any Ahi Tuna enthusiast. This stunning salad features a generous portion of ahi tuna, lightly seared and artfully fanned atop a fresh lettuce blend. Surrounding the tuna are crisp carrots, refreshing cucumbers, Thai glass noodles, cilantro, and scallions, creating a delightful array of textures. The salad is elevated by Yum Pow, a flavorful Thai-inspired dressing, and finished with a duo of Sriracha and Wasabi aiolis. These sauces add an exciting punch of flavor with just the right amount of spice, making each bite absolutely delicious. This is, without a doubt, one of my favorite salads at Chive!
Chive’s taco lineup offers an array of fresh, bold flavors that are sure to impress, starting with the Mahi Mahi Tacos. The mahi is fresh, never frozen, hand-cut daily at The Green Marlin, and cooked to order, resulting in a perfectly tender fish with a light, clean taste. For those seeking a bit more spice, the Cajun Chicken Tacos deliver with blackened chicken bursting with bold Cajun flavors, making them my personal favorite between the two. Both tacos are topped with a crisp dressed salad or slaw, bright salsa fresca, and Chive’s signature Sweet Chili Cream Sauce, adding a balance of sweetness and spice that enhances every bite.
Another standout option is the Coco Scallop Tacos, which bring a tropical twist to the table. Featured on our show, Holy Grail Eats, these tacos showcase perfectly seared scallops infused with a subtle coconut flavor, offering a refreshing yet indulgent experience. Smash Burgers are a delightful addition to the menu, embracing the popular trend with their own tasty twist. Each burger patty is expertly “smashed” on the flattop griddle along with a handful of sliced onions, creating a flavorful crust that’s grilled to perfection. Topped with melted American cheese and served on a toasted brioche bun, the burger comes fully loaded with crisp lettuce, juicy tomato, and pickles. Served with a side of French fries (among other options), this burger is a must-try for anyone craving a classic done right.
Chive’s cocktail selection is as enticing as its menu, with a full bar offering a variety of refreshing drinks to complement your meal. Featured above are three must-try cocktails: the House Margarita, a classic that’s perfectly balanced with a hint of citrus; the Pomegranate Martini, a vibrant and slightly tart choice that’s as visually appealing as it is delicious; and the Bourbon Peach Tea, a smooth, sweet blend with just the right touch of Southern charm. Whether you’re here for Happy Hour or dinner, these cocktails are a delightful way to elevate your experience.
