Gilbert’s Coffee Bar at Sunset Bay Restaurant Review – Stuart, FL

Gilbert’s Coffee Bar at Sunset Bay Restaurant Review – Stuart, FL – There are few better ways to spend a sunny Florida afternoon than sipping coffee by the water, and Gilbert’s Coffee Bar at Sunset Bay delivers exactly that. When we arrived, the sun was shining, the water was perfectly calm, and despite the balmy weather, the waterfront setting made it the perfect place to slow down and enjoy a few seasonal sips and bites.
Location & Atmosphere

Gilbert’s Coffee Bar at Sunset Bay is the brand’s flagship location and has been serving Downtown Stuart since 2018. Nestled right along the waterfront with beautiful views of the St. Lucie River, Gilbert’s brings a relaxed coastal feel.
When we arrived, the sun was shining, the water was perfectly calm, and the whole setting felt made for slowing down with a coffee in hand. Gilbert’s serves specialty coffee roasted by award-winning Wells Coffee Company in Fort Lauderdale, making it easy to enjoy a cappuccino, cold brew, or one of their seasonal drinks while taking in the gorgeous views of the St. Lucie River.
When browsing the menu, I also noticed a strong emphasis on supporting businesses throughout Florida. Gilbert’s sources food through CoLab Kitchen, wraps from Chef’s Table, tea from JoJo Tea in Miami, and bread from Bread by Johnny in Jupiter. As someone who already loves Bread by Johnny, I was especially excited to see it featured here.
Avocado Toast

There’s a reason the Avocado Toast is one of Gilbert’s best sellers. Fresh, light, and delicious, it combines creamy avocado, tangy goat cheese, and red onion on Bread by Johnny, then finishes everything with olive oil, flaky sea salt, Everything But the Bagel seasoning, and pepper. The contrast of flavors works beautifully together, with the goat cheese adding richness while the red onion provides just enough sharpness to keep everything balanced. The seasoning and flaky salt add another layer of texture and flavor without taking away from the freshness of the dish. Simple, satisfying, and exactly what you want for breakfast or lunch by the water.
Fall Toast

Gilbert’s had recently rolled out its seasonal fall menu during our visit, and the Fall Toast absolutely tastes like autumn. Served on Johnny’s sourdough, the toast is layered with mascarpone and house-made pumpkin butter, then topped with cranberry walnut granola and cinnamon. The pumpkin butter was the standout for me, with a rich seasonal flavor that blended beautifully with the tart cranberry and creamy mascarpone. The granola added crunch while the cinnamon tied everything together with that warm, comforting flavor that makes fall my favorite season.
Caramel Apple Chai

If fall could come in a cup, it might taste something like the Caramel Apple Chai. Made with Gilbert’s house made chai and apple syrup, then finished with a house made caramel drizzle, the apple flavor comes through immediately and gives the drink an almost apple-pie-like quality. The caramel adds just enough sweetness to bring everything together without overpowering the chai. It can be served hot or iced, but I went with hot, and this ended up being my favorite drink of the visit. Cozy, flavorful, and perfect for pretending it isn’t still 80-something degrees outside.
Pumpkin Pie Latte

For something a little more refreshing on a balmy Florida afternoon, I tried the Pumpkin Pie Latte iced. Made with espresso and house-made pumpkin syrup, the iced version is topped with maple cinnamon cold foam and pumpkin spice. The espresso flavor remains strong while the pumpkin adds just enough seasonal sweetness, and the cold foam brings in a creamy maple-cinnamon finish that makes the drink feel especially seasonal. It can also be ordered hot, in which case it’s topped with maple cinnamon whipped cream instead. I went with the iced version, and it was a refreshing way to enjoy those classic fall flavors without fighting the Florida heat.
