The Green Marlin Restaurant & Raw Bar Review – Vero Beach, FL

In the mood for fresh seafood? How about some oysters? A staple of Vero Beach dining, The Green Marlin has been serving the community only the freshest seafood and inspired dishes since its opening in August 2017. Owned and operated by Lou Kolbauer, who also owns Chive Restaurant several blocks north, you can feel the passion as soon as you walk in.

Barely a mile from the Indian River Lagoon, the restaurant is located right off of US-1, just south of 17th Street. Since opening, Lou’s mission with The Green Marlin was to provide the locals of Vero Beach with only the highest quality seafood and oysters for a reasonable price. It’s no joke either – everything from the sea is delivered that day! Upon entering the restaurant I was greeted by a wonderful staff who led me into their cozy, casual dining room. The walls are filled with art created by Lou himself, and the booths & tables give off a charm that reminds you of the good old days. There is also a bar both inside and outside for some adult beverages with your tasty bites!

Now, on to the food!

Being a lifelong fan of oysters, I started off my meal with an eye-catching spread, a half dozen oyster sampler platter of their Sushi, Ceviche, and Dirty Oysters. While the presentation alone is fantastic, seeing them simply doesn’t do it justice. Beginning with Dirty style, I was very impressed compared to other restaurants’ interpretations. The way the sour cream brought it all together was incredibly smooth, with the scallions providing a nice onion flavor and the caviar adding a pleasant sweet finish. The ceviche oyster was lovely, topped with a mignonette of assorted vegetables it was truly reminiscent of ceviche with the blend of acidic and tangy flavors. However, the true star of the show for me was the Sushi Oysters, prepared with a seaweed salad, soy sauce, sriracha aioli, and wasabi aioli. If you told me that it was a bite of a krab roll, I would believe it!

Next up was the Bangkok Shrimp Tacos. Lightly battered flash fried shrimp tossed in a sweet soy sauce, topped with baja slaw, tropical salsa, queso blanco, and sriracha aioli in two flour tortillas with rice and beans on the side. Each bite of the tacos was an explosion of flavor with the sauces marrying the perfectly fried shrimp with the tropical salsa for a sweet, spicy, and fruity experience.

Mahi Mahi Island Style at The Green Marlin Restaurant & Raw Bar in Vero Beach, FL, served over rice and beans with tropical salsa and sweet chili cream.

For my final entrée, I had the Mahi Mahi Island Style. A perfectly seasoned and cooked filet of Mahi Mahi, topped with tropical salsa and sweet chili cream on a bed of rice and beans. The Mahi filet flaked apart with ease and melted in my mouth, paired with the salsa and cream sauce each bite made me feel like I was on the beach.

Last but not least, dessert! An all-time favorite of mine is Key Lime Pie, so when I saw that as an option I knew I couldn’t resist. This pie was no joke either – a soft, creamy blend of sweetness and key lime flavor with a pleasant, signature bitter finish. A tropical dessert to end a tropical dining experience, I couldn’t ask for more.

If you’re looking for a local, casual, but elevated seafood meal, The Green Marlin Restaurant & Raw Bar is an excellent choice. With so many different options to choose from, I could easily see myself coming back time and again just to try a new dish or revisit an old favorite. They also offer brunch service on Sundays, and live music on select nights. Next time you’re near, give them a shot!
