Located at the end of a business plaza in Stuart, Pez Vela Fusion Kitchen is one of the newest dining destinations to hit the Treasure Coast, having opened its doors in late January 2025. The space has undergone a complete transformation and now radiates elevated, contemporary charm. Inside, you’ll find a thoughtfully designed layout featuring a spacious double-sided bar—half indoors, half out—offering a seamless flow between lively energy and laid-back coastal vibes. The restaurant also includes a private room, perfect for hosting special events. With a full bar and a bold, fusion-forward menu that combines Spanish and Asian flavors, Pez Vela offers an exciting and unique take on global dining right here in Stuart.

The vision behind Pez Vela is rooted in a deep love for food, travel, and community. The owners, with strong family ties to Stuart, grew up visiting the area and have always held a special place in their hearts for the town’s charm and natural beauty. After building a successful international business and experiencing cuisines around the world, they returned to Stuart in 2020 with a desire to contribute to its culinary landscape. They first reenergized the local favorite Taco Shack and expanded it to Jupiter, then launched Stack Burgers and Bourbon in 2024. But the dream wasn’t complete until Pez Vela—Spanish for “sailfish”—was brought to life. This restaurant blends worldly flavors, fine wines, and handcrafted cocktails, all anchored by a love for the community that inspired it.

With a well-curated cocktail list on the menu, I opted for one of their mocktails since I had a bit of a drive ahead. The Pineapple Crush—a blend of pineapple, ginger, coconut water, and soda—was a light and refreshing choice. Balanced with just the right amount of sweetness and a subtle zing from the ginger, it was the perfect way to kick off the meal without the buzz.

Next up from the appetizer menu, I went with the Vela Wings. These crispy tempura-battered wings are fried to perfection, then tossed in a rich gochujang butter and finished with a sprinkle of scallions and sesame seeds. Tender, juicy, and bursting with umami, they delivered just the right kick of heat—enough to wake up the palate, but still mild enough for those who shy away from anything too spicy.

From the Lunch Specialties menu, the Tres Golpes Burger was a bold and inventive choice. Featuring a house-blend of brisket, short rib, and chuck, this juicy patty is topped with sweet plantains, spicy chorizo, creamy queso de mano, and a zesty cilantro-shishito aioli—all stacked on a soft brioche bun. The mix of sweet, savory, and spicy flavors worked in perfect harmony, creating a burger that’s anything but ordinary. It’s served with housemade yuca frites, which look like mozzarella sticks but deliver a crispy exterior and a fluffy, tender center—an ideal pairing for this flavorful handheld.

To round out the meal, I tried the El Frito sushi roll—a bold and flavorful fusion creation. This roll features spicy tuna, avocado, and cream cheese, all tempura-fried to a golden crisp. It’s then topped with a savory soy glaze, a drizzle of sriracha aioli, and a vibrant cilantro-shishito pepper garnish. Rich, crunchy, and full of contrasting flavors and textures, this roll is a must-try for anyone craving something a little bit adventurous.
