Cobalt is one of my favorite places to dine on the island. They also have one of the largest outdoor patios, some of the best views of the Atlantic ocean, and food that far exceeds my expectations every single time I dine there. It’s been almost a year since my last review, and with the newly updated menu featuring quite a few more steak options, I thought it was time to stop by and see what’s changed. In the summer of 2022, they plan to shut down the restaurant for a complete renovation. No stone will be left unturned. They plan to gut and completely re-do the kitchen, the dining room will be lighter and brighter, and an awning outside will allow guests to dine oceanside without the worry of a stray afternoon shower. During that time, Heaton’s, their pool side restaurant & bar will remain open.

Now let’s dive right in and see what this place has to offer and what my guests and I had to eat!

Kimpton Vero Beach Hotel & Spa at Night
Dining Room
Seafood Risotto – A wonderful selection of Bay scallops, shrimp, lobster, artichoke, and spinach are served a classic risotto. All seafood was cooked to perfection and the rice had the right amount of chew and seafood flavor.
Seafood Tower – It contains a lobster salad, conch salad, jumbo cocktail shrimp, and oysters. Everything on this tower was quite fresh and very tasty! The cocktail shrimp are some of the biggest I’ve ever seen!
Custom Steak Board & Sides – Contains Strip and Filet, Roasted Garlic and a loaf of crusty bread. Sides were creamed spinach & Artichoke, French fries, crispy brussels sprouts, and risotto. While these items are on the menu, this platter was made up special for our event.
Dessert Sampler – The platter had pecan pie, a blueberry parfait, and various other sweet treats! This platter was made special just for our event.
