Located on Babcock Street in Palm Bay, this neighborhood bistro is proof that fine dining-level cuisine can make an appearance in even the most ordinary towns.

Like many great hole-in-the-walls, Southern Cypress Bistro is tucked inside an unassuming strip mall. Owner Toni Thomas spent a year transforming the space into the restaurant you see today. There’s outdoor seating for cooler Florida nights and plenty of room inside, including bar-style seating for casual diners. The atmosphere is laid-back but still modern, with sleek black details and charming brick and grass accent walls.

Mocktails

i started with the Orange Cream Dream and Blushing Lavender Spritz. The Orange Cream Dream combines fresh-squeezed orange juice, vanilla syrup, and cream for a Creamsicle-like flavor. The Blushing Lavender Spritz blends lemonade, lavender syrup, and strawberry puree with crisp tonic water. It’s light, floral, and great for a hot summer day.

Tomato Bruschetta

Marinated heirloom tomatoes and shallots are layered over roasted garlic whipped burrata, drizzled with brandy balsamic glaze, topped with local microgreens, and served on a French baguette. This was one of the most interesting bruschetta I’ve had. It’s fresh, savory, and satisfying. It scratches the same itch as pizza, but in a much fresher, lighter form.

Cheese Fried Eggs

A sunny-side-up egg sits on a crispy layer of cheddar and Parmesan cheese, with sweet onions and local herbs balancing the saltiness. Moving forward, I only ever want to eat eggs this way. It comes with fresh sourdough and candied bacon that was perfectly sweet and smoky.

Chorizo Biscuits & Gravy

This one rivals your grandma’s recipe. A house-made pimento cheddar biscuit is topped with creamy sherry gravy, locally sourced chorizo, and a fried egg. The chorizo brings the perfect amount of spice and gives the creamy gravy a deeper, more savory flavor than your average biscuits and gravy.

Moringa Pesto Burger

Moringa is a nutrient-dense plant known for its vitamins, minerals, and antioxidants, but don’t worry. This doesn’t taste like some “healthy alternative.” This is an honest-to-goodness burger. A Wagyu beef patty is topped with truffle Parmesan, sun-dried tomatoes, caramelized onions, moringa pesto, and lettuce. You get the heartiness of the Wagyu and Parmesan, sweetness from the tomatoes and onions, and freshness from the pesto and lettuce. A perfectly well-rounded, totally unique burger.

Million Dollar Fried Chicken Sandwich

Crispy buttermilk fried chicken is glazed with a pineapple-citrus reduction and topped with gold flake and candied bacon on a brioche bun with black garlic aioli. The chicken was perfectly golden and incredibly juicy inside. This sandwich is not to be messed with. The sweetness of the glaze cuts through the richness of the fried chicken, while the black garlic aioli adds a deep, savory finish.

Why Southern Cypress Bistro is Worth a Visit

The magician behind these flavors is Chef Caleb DeRosa, whose background in organic farming and culinary education shines through in the quality of every ingredient. The experience was made even better by Amber and Nicole, who were incredibly warm and welcoming throughout our visit. Their from-scratch mindset is serious, too. There are no microwaves in the kitchen and only one can opener. That’s about as from-scratch as it gets. In just four months, Southern Cypress Bistro is making its mark in Palm Bay by staying focused on what matters most: quality ingredients, food made from scratch, and dishes you aren’t going to find everywhere else.
