The Tides of Vero Prepares for New Location This Spring – The Tides of Vero is getting ready for an exciting new chapter as they prepare to move into a brand-new location this spring. As part of the transition, reservations for June are currently on hold while the team finalizes opening timelines and logistics to ensure a seamless experience for guests. Pasta Alla Genovese with braised beef and bucatini at Jolie American Bistro

Jolie American Bistro – Pasta Alla Genovese
As described by our contributor Gabriela in her recent visit, the Pasta Alla Genovese at Jolie American Bistro is a true standout. Made with slow-braised onion and beef ragù, red wine, Parmigiano Reggiano, and fresh bucatini, this dish is built on layers of flavor developed over hours of cooking. The onions break down into a deeply sweet, rich sauce, while the beef becomes incredibly tender, coating each strand of pasta. The bucatini is cooked perfectly al dente, adding just the right texture to an already comforting and satisfying dish. After hearing how good it was, I had to try it for myself—and it absolutely delivered. I went in planning to take just a few bites, but it was so good I ended up finishing the entire bowl. This is one of those dishes you don’t forget and one I’d go back for without hesitation.
