Stringers Tavern & Oyster Bar Restaurant Review – Stuart, FL
Stringers Tavern & Oyster Bar is a newly established restaurant in Stuart, FL, paying homage to the town’s boat-building history. Opening on May 10th, 2021, the restaurant’s name is inspired by the wooden beams called “stringers” used in traditional wood boats. With a rich heritage of skilled boat builders dating back to the 1970s and 1980s, Stringers embraces the maritime legacy of the area. The restaurant’s ambiance immerses diners in the town’s history, featuring captivating images of locally crafted boats spanning nearly a century. These visuals add a unique charm to the dining experience, evoking nostalgia and celebrating Stuart’s maritime culture.
I first had the pleasure of meeting Chef Dave Gould over four years ago at Cobb’s Landing in Fort Pierce, and I was immediately impressed with his culinary talents. Recently, I had the opportunity to reconnect with him during my review of the Dolphin Bar & Shrimp House, where the food was nothing short of spectacular. Chef Dave has since taken the reins at Stringers and embarked on a significant menu revamp, with over 90% of the dishes receiving a makeover. In light of these exciting changes, I was invited back to sample some of the new dishes, which I’m thrilled to feature below. Furthermore, since my last visit, I was delighted to discover that Stringers has fully enclosed their outdoor patio, transforming it into a versatile 70-seat event room. This addition provides an ideal space for hosting parties, rehearsal dinners, or business meetings, further enhancing the restaurant’s appeal as a multifaceted dining destination.

Now let’s dive right in and see what this place has to offer and what I had to eat!
During my last visit to Stringers, I regretfully missed out on trying their oysters, despite their prominent place in the restaurant’s name. Knowing I’m not a fan of raw oysters, I was pleasantly surprised when they presented me with a selection of their broiled (on the left) and butter-grilled (on the right) oysters. I must say, these oysters were nothing short of spectacular. Each one burst with delicious flavors that left me thoroughly impressed. It’s safe to say that Stringers might have just turned me into an oyster enthusiast!
Pomme Frites are one of the newest menu offerings at Stringers, offering a delightful variety to choose from. I had the pleasure of sampling two new and exciting varieties. On the left, you’ll find Pomme Frites made from fresh Idaho potatoes that have been double-cooked to crispy perfection and then seasoned with a blend of sea salt and fresh herbs. What sets these apart is the assortment of delectable dipping sauces that accompany them, making them far from your typical “french fries with ketchup.” This dish is a fun and shareable appetizer that’s sure to please everyone at the table. On the right, is the Mainsail Loaded Frites. These delectable frites are generously smothered in a decadent St Andre Cheese sauce, complemented by aged white cheddar, crispy pork belly, and a kick of flavor from fresh Fresno and jalapeno peppers. The garnish of green onions adds a refreshing touch. The portion size is substantial, and you could easily make a meal out of this dish.
The next appetizer to grace our table was the BBLT, a creative deconstructed take on the classic dish. It features Bourbon Glazed Cheshire Pork Belly Kebabs, paired with Orange Blossom & Vanilla Bean Honey Vinaigrette dressed Arugula and a medley of Baby Heirloom Tomatoes. The pork belly proved to be the star, offering a melt-in-your-mouth tenderness that perfectly balanced the satisfying sweet and salty flavors. The richness derived from the fatty pork belly was truly indulgent. I must say, this dish quickly became one of my favorites of the evening.
The Bow to Stern Seafood Pasta is a true standout on Stringers’ new menu, and it’s easy to see why. This delightful dish brings together a medley of ocean-fresh ingredients, including clams, jumbo shrimp, fresh fish, and calamari, all harmoniously tossed in a flavorful blend of olive oil, fresh garlic, tomato, and green onions. The result? Spectacular, to say the least. The seafood was perfectly cooked, the pasta was al dente, and it had lots of garlic flavor, so it quickly claimed the title of my favorite among the new menu items and the entire evening’s dining experience.
The Sterling Silver Kansas City Strip, a 14oz Bone-In Black Angus choice cut, is elegantly crowned with a sumptuous bone marrow butter. This cut of beef originates from Sterling Silver Ranch located in Montana. Stringers has made a commitment to sourcing all their steaks from this ranch to maintain consistent quality across their offerings. For those seeking a tailored steak experience, Stringers provides a separate menu that offers a delightful variety of compound butter and temperature options, ranging from blue to well-done. My steak, cooked to medium, was seasoned perfectly and very flavorful. It came with tender collard greens (underneath to the left), providing a pleasant contrast with a subtle kick. The House Scalloped Potato, however, had a strong herb flavor that didn’t quite suit my personal taste.
